- for wine culture and for the homage and presentation of noble wine;
- for wine science and research;
- for what is true, good and beautiful as well as for cultivated parties;
- for the change for the better in matters of living and wine;
- for Christian values, because the sacred centre of the European Order of the Knights of Wine is rooted in the symbol of our faith;
- For the true nobility of spirit, therefore, knightly offices are distinguished by voluntary and honorary functions; in this sense, they are of common use and not directed to profit;
- for social, charitable, cultural and scientific initiatives;
- for the fulfilment of a high historical, social and cultural claim, because the European Order of the Knights of Wine has its roots in the tradition of the chivalric orders of the Middle Ages, in particular that of the Order of St. George in 1273, 1308 and 1468 respectively; for the cultivation of ideal values, noble spiritual beliefs and precious chivalric friendship;
- for human dignity and for the European community of values;
- for European identity and natural European belonging;
- for peace, because the richness of wine demonstrates the fruitfulness of peace.
